Spring has finally arrived, and I hope you guys are out and about enjoying the nice weather. Hiking season calls for healthy, easy, and nourishing snacks that you can throw in your backpack and grab on the go. These trail mix protein bars couldn’t be any easier to make and fuel you and your muscles with healthy fats, protein and simple carbs as well as fiber.



120g almonds

100g pumpkin seeds

75g sunflower seeds

280g dates, pitted

80g almond butter

25g natural vegan protein powder*

70g Goji berries



Soak dates in hot water for about 10minutes, rinse

Place almonds, pumpkin and sunflower seeds, dates, almond butter, and protein powder in a food processor and process for 2 minutes or until the mixture comes together (add a few Tbsp hot water if it doesn’t come together)

Add the Goji berries and pulse until well combined

Press the mixture into a square tin or Tupperware lined with cling wrap

Refrigerate for 40 minutes or until firm

Cut into 8 squares, and wrap it individually in parchment paper, store in the fridge
